Ugg the weather outside is frightful … so I have been craving homely foods. So I decided to make some soup. I fancied something a little bit different parsnip and ginger soup it was. It was pretty simple:
Two carrots
500g of parsnips
Two sticks of celery
Two medium onions
A thumb sized piece of ginger
Two stock cubes dissolved in water.
Chop all the veg and pop into a heavy based pan. Fry until the carrots start to soften. Add the stock and bring to the boil. Once boiling turn down to a simmer and simmer until the veg is soft. Once soft turn off and allow to cool. Then blend. That’s it!
Serve with crusty bread and if you like heat add a few chilli flakes.
