I love pancakes, proper Scottish drop scones are my favourite.
This is a proper indulgent topping. Really rich and chocolatey. It does take a while for it to thicken properly , but it’s worth it. You could add a splash of cream to make it slightly less chocolatey. If you decided to do that wait until you take it off the hob and it’s cooled slightly!
90 ml water
1 ½ tablespoons dark brown muscovado sugar
100 grams unsalted butter (cubed)
150 grams best-quality dark chocolate (finely chopped)
- Put the water, muscovado sugar and butter in a pan over a low heat to melt.
- When it starts to bubble take off the heat and add the chocolate, swirl til it melts, then whisk until smooth and shiny
- Then whisk occasionally (once every ten minutes or so) for the next hour and then use on pancakes or crepes. (You could use it straight away but it will be quite runny, the hour gives it time to thicken up.)
